Winter means comfort food! So in our house I like to make sure our freezer is stocked with nourishing soups and stews instead of processed convenience foods.
This Dahl is absolutely loaded with flavour and super satisfying.
I soaked my red lentils the night before, which helps soften them and reduce tummy aches. For a full flavour, I dry fried cumin, turmeric and chilli before adding to the pot, browned off some onions and garlic in olive oil and added coriander, bay and curry leaves and and generous pinch of Celtic salt. Add approximately a litre of water and slow cook for 6 hours, topping up with water as it reduces down.
